On a recent trip to Reno for a basketball tournament, we had dinner at one of our favorite places - the Silver Peak Restaurant and Brewery - twice! The lamb burger with feta cheese and Greek olive tapenade was so delicious I ordered the same thing both nights. On the way home I stopped to pick up some ground lamb so we could make it again for dinner at home. Three lamb burgers in one Memorial Weekend. Hmmm ... it must be good! Give it a try.
Lamb Burgers with feta cheese and Greek olive tapenade
(Serves 6)
Burgers
2 pounds of ground lamb
1 teaspoon dried oregano or rosemary
Salt and pepper to taste
Mix all of the above and shape into burger patties. Prepare gas or charcoal grill. Cook lamb burgers until desired doneness, 3-4 minutes per side for medium to medium rare. In the final minute or so of cooking top with feta cheese crumbles and continue to cook just until cheese is slightly melted.

1 cup crumble feta cheese
1 cup Kalamata olive tapenade (recipe follows)
Greek olive tapenade
2 cups Greek olives, (green, black or both) pitted
1 tablespoon olive oil
Process pitted olives in food processor until coarsely chopped. Add olive oil and mix well. Set aside.
Spread tapenade on both sides of bun. Place burger on bottom of bun and serve 'em up!
