Zucchini Cookies

Zucchini Cookies

¾ cup softened butter
½ cup sugar
½ cup brown sugar
1 egg
1 ½ cups whole wheat flour
1 cup flour
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
¾ teaspoon salt
½ teaspoon ground cloves
1 1/2 cups shredded zucchini
3/4 cup raisins
3/4 cup walnuts (chopped; optional)
Cream together first three ingredients. Then add egg and beat until fluffy. In another bowl, sift together flower, baking powder, cinnamon, salt and cloves. Combine dry ingredients with creamed mixture. Stir in zucchini, raisins and optional walnuts. Drop onto greased baking sheets. Bake in preheated oven at 375 degrees for 10-12 minutes.
Chocolate chip variation: Omit spices and raisins. Add 1 teaspoon vanilla and 3/4 cup chocolate chips.
