2 cups all-purpose flour
1 cup sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon vanilla extract
15 oz steamed pumpkin (or 1 can)
4 eggs
¾ cup apple sauce
1 cup raisins, optional
Preheat the oven to 350 degrees. Grease a jelly-roll pan (15-inch baking sheet with sides). Stir together the first eight (dry) ingredients in a large bowl. Add vanilla, pumpkin, eggs and applesauce. Beat until well blended. Mix in optional raisins. Spread batter in prepared pan. Bake 20 to 25 minutes or until tester inserted into the center comes out clean. Remove from oven and allow to cool on rack. Cut into 24 squares.
