6 small or 4 large beets
1 tablespoon olive oil
2 teaspoons salt
1/4 cup balsamic vinegar
3 tablespoons firmly packed brown sugar
Preheat oven to 400 degrees. Peel the beets, coat with oil and sprinkle with salt. Wrap each individually in aluminum foil and bake 50 minutes. Meanwhile, heat the vinegar in a small saucepan. Add sugar and stir to dissolve, simmer 15 minutes; set aside. Unwrap beets and allow to cool slightly. Slice beets into 1/4-inch thick slices. Place in a roasting pan in a single layer. Pour vinegar on top and return to the oven for 5-10 minutes.
